Starches are the most predominant and versatile class of ingredient in food manufacturing supply chain due to its abundance, nutritional value and flavor, not to mention inexpensive.

While most starches (and fiber) for food production have been largely derived from cereals, the trend for gluten-free and non-GMO has led to a surge in the use of already mainstreamed starch ingredients from roots and tubers ( tapioca and potato starches). There also has been a sudden growth in the use of starches derived from pulse, legumes  and even green banana fruit.

As interest in healthier products, increased protein composition, and cleaner labels increases, natural ingredients and gluten-free options are in high demand.
To meet this,  ingredient suppliers are investing in research and development to deliver native starches, flours with better form and functionalities in a growing list of applications.

Developers striving to remove gluten or looking to achieve a clean, consumer-friendly label may want to consider harnessing the functionality of green banana flour. The “functional fruit” is a starch with a chemical composition similar to waxy corn, i.e., 75-80% long-chain amylopectin and 20-25% amylose.

According to market data - In its starch production processes, the European Starch industry produces 5.2 million tonnes of protein products (2017), including wheat proteins such as vital wheat gluten and wheat gluten feed, corn gluten meal and feed, potato proteins and pea proteins.

Potato starch producer Avebe and potato growers had to deal with drought and high temperatures in the second half of July, which has affected the harvest.
 
Following such unpredictable cultivation season, Avebe production began in end of August and its first potatoes were delivered at the locations in Gasselternijveen (NL) and Dallmin (Germany). Other production locations in Ter Apelkanaal and the German Lüchow are also expected to start production soon. Avebe will also process potatoes from other affiliated members.
 
Avebe’s harvesting season continues until mid-April 2020. It procures potatoes from over 2300 Dutch and German members and processes them into potato starch and potato protein that are used in food, industrial applications and animal feed.
 
Avebe predicts a lower starch yield in this season as compared to past years. However, since the harvesting season has just started, it is still early to exactly predict the output.

Dutch company Gabanna is using Ugandan 'matooke' green bananas to produce a fine power that is added to pastas and cereals.
 
Gabanna claims matooke has a lot of potential to be used as a food ingredient given that it has a neutral taste and holds its structure when exposed to heat and different processing methods. In addition, it is gluten-free, high in dietary fiber and resistant starch – which makes it a slowly digested carbohydrate that doesn't spike blood sugar levels.
 
Gabanna is using the green banana flour in its pasta along with other nutritional ingredients such as buckwheat flour, yellow pea flour, and pea protein.
 
Interestingly, matooke green bananas is indigenous to southwest Uganda – which is a staple crop for the country.
 
Although 75% of farmers in Uganda grow matooke, about 30% are wasted due to overproduction and lack of demand. Gabanna sees exports as a viable solution to such wastage.

Agribusiness major – Cargill is expected to invest around €20 million ($22.5 million USD) in expanding its instant starch manufacturing capacity at its plant in Sas Van Gent, The Netherlands. This includes construction of a new building and installation of two new roll dryers in the facility. Cargill Starches & Sweeteners Europe processes corn and wheat to manufacture value-added products dedicated to the food and beverage, papermaking, corrugating, bioindustrial, pharmaceutical, personal care and animal nutrition industries.
 
The expanded facility is expected to be completed this year and cater to the increasing consumer demand for instant or convenience food across the world.
 
Instant starch is a key ingredient in many cold prepared foods. The demand for ready meals, sauces, soups, cakes and pastries have been growing and Euromonitor observes that these foods (combined) grew by 11 percent from 2013 to 2018, which is surpasses the growth of overall packaged food of 7 percent in the same period.
 
Cargill’s investment in the plant is in line with these trends and is expected to meet the demand for instant food industry.
